SAVING SEEDS - SWEET POTATO

In the spring take 3-4 sweet potatoes and lay them in damp sand on their sides. Cover them with more damp sand and keep them damp. After a few weeks you will notice shoots starting to grow from the growing tip. After the shoots reach 4-6 inches, carefully remove them from the potato (the potato should send out more shoots) and place the shoots in damp sand until the are well rooted.

Mist with weak fertilizer solution daily then plant them (1-2 plants per hole) spaced about 3 feet apart. In the fall when the vines start to yellow, it is time to dig up your potatoes. Dig like you would any potato and let dry for a couple of days before storing.

One thing to remember is that the sweet potato will get sweeter as it gets older. Save 3-4 of your best looking potatoes for spring slip making.
